What is the reason AA is setup by default on my OBi100 connected to Anveo for E911?

I have this setup for inbound/outbound GV calls via an OBi200 also on my network.
It is basically the default config from OBiTALK.
In use, the OBi100 will be at a remote location on a different network. What will I have to change to allow the 100 and 200 to talk to each other?

I have disabled AA.

You will probably need no changes.  The Obitalk network (effectively an additional non-configurable preset SP slot on every OBi) is enabled by default.  That allows you to call any other OBi by dialling **9 followed by its 9 digit OBi number.  (That number is usually on a label on the underside of the OBi.)
