is it really safe to give Obihai my primary Gmail address and password?

I have a Google Voice number that I have used for a couple of years.
It's the same Gmail address that I use as my primary email. (in fact,
my only email address)   I also use it for Google Wallet.

Since I have to enter my Google Voice name and password when
setting up the Obi110, how safe is it to give this information to
Obihai? I assume they can also see it, right?

I do realize that I can just set up a new Gmail address and sign up
for another Google Voice number.  However, that will mean giving
up my current Google Voice number. :(

It is a good practice to keep a separate Gmail account for your GV number, and keep all your other Gmail dealings in a 'private' account. You can also transfer your GV number to a new account, look in the the GV Forum for 'Transferring your Google Voice number to another account.'

There's no need to create a separate Google account for your Obi device. Just create an "application-specific password" for your GV account and use that for your ObiTalk account:
