I didn't look into it extensively, but I think Obitalk may have a control channel over XMPP for controlling the OBi device. I had to disable it when I wanted to stop Obihai from rebooting my device whenever I make a small change on the Obihai portal (although the changes won't push to the device anymore...)

The only way to be sure they most likely can't touch your Obi is to reroute DNS away from all Obi servers. They can force an update via incoming sip message if they want. It's a special command in the SIP header. I believe that command is only done via the Obitalk service but it could probably be don in other ways. Obviously I make no guarantee.
