One of my neighbors is selling some Cisco SPA 504G office phones.
How would these phones connect to GV? Using Simonics?

Yes that is the most straightforward way. Other methods such as linking to an Obi20x or a PBX such as Asterisk running on your hardware or in the cloud require higher expenditure and more complex configuration.
