Has anyone run into this problem where I can successfully add a my device / GV and it works fine for a few days. Then the device disappears on the portal and I have to re-add it?
I've done hard resets and all the things one would do but it keeps happening. Was just considering returning the thing.

Never heard of that but it sounds like a portal problem, not the device itself. Once a device is visible in your dashboard on the portal it should remain there even if the device is powered off or disconnected from the internet. There is a delete button on the dashboard but I think you would know if you are using that.
