I'm having a tough time finding a complete GV features list other than the Wikipedia one below. Is this current/complete? How do you block specific numbers in GV?

How do you block specific numbers in GV?
For normal blocking of unwanted numbers.
Once a number has called you it is listed in your call history. Under the number click the "more" drop down and select "Block Caller". All future calls from the number will be in spam, not in the history. The caller will get a sits tone and a not in service message.
You can also put the number in your contacts and manage it from there.
From the contact select "Edit google voice settings". There you can select a specific group that doesn't ring any phones etc. From there you can also turn on call screening for each individual contact without turning it on for everyone.

You list didn't mention Google Voice Lite (http://support.google.com/voice/bin/answer.py?hl=en&answer=115127).

For this one, there's also changing the Settings, such as switching Forward To phones, from a mobile browser. The part I really like is it works in even the simplest mobile browsers, you do not need a bleeding-edge smartphone to do this.
